Giving ya’ll another yummy smoothie to try as I’m just been going non stop and honestly these are quick and very filling!!

Pina Colada Shake
1 cup coconut or almond milk
1/3 cup canned full-fat coconut milk
1 scoop Vanilla plant based protein powder
1/2 cup fresh, frozen, or canned unsweetened pineapple chunks
Ice, add to blender or pour smoothie over ice

It’s been a crazy month and I really haven’t had time to do a lot of cooking. I have been doing a lot of smoothies as a result. Here’s one of my go-to favorites for a great morning breakfast pick-me-up.

Pineapple Mint Green Smoothie
  • 1 - 1 1/2 cup water, coconut milk, or almond milk
  • 1/4 avocado or 1/3 cup canned full-fat coconut milk
  • 1 scoop Vanilla plant based protein powder
  • 1/2 cup fresh, frozen, or canned unsweetened pineapple chunks
  • 5-6 fresh mint leaves
  • 1/2-inch piece fresh ginger peeled and grated
  • 2 handfuls of baby spinach - chopped
  • Ice, add to blender or pour smoothie over ice

Unfortunately I haven’t been trying out any new recipes lately, but I did find this gem that I plan to try out soon! I plan to tweak it a bit and sub out the regular flour for a Gluten Free kind. I’ll let you know how it turns out! Vegan Marble Cake looks yummy!

Turkey Taco and Cauliflower Rice Skillet by Slender Kitchen happens to be one of my morning favorites. I also like to add in chopped onions. This freezes great, so I usually make a batch and then divide it into portions for a quick skillet breakfast heat up. Top with your favorite taco fixings and pair with a couple of eggs for an even higher protein meal.

So, I’ve started yet another diet. Yes, another diet. Because of my gluten allergy I tend to stick to a more paleo based diet. Well, that can get boring sometimes and you guessed it, I put on a few pounds. Compound that with the fact that I’ve been really lazy with working out and well, here we are.

Anyway, a friend recommended that I try the 17 day diet. After much review I decided it looked healthy, recipes were pretty easy to make, and you can find multiple menus so planning out your meals is easy, which frankly is a must for me. Anyway, I’m on cycle 1 down 3 lbs my first week, I’ll take it.

Veggies are a staple on this diet and while scanning Pinterest for fun recipes, I happened to stumble across this Italian Roasted Vegetables one posted on My 17 Day Diet Blog. Looks delicious and I can’t wait to try it!

Well, the vegan for a month lasted literally a month. I have found several new foods and recipes that I like that I will continue to make, but going totally vegan just isn’t for me. I actually had some issues with some of the recipes, as they called for all-purpose flour. Since I have a gluten allergy, that just wasn’t going to work. In many cases I was able to substitute and tweak each recipe, but I was a little surprised as I was expecting most of the recipes to be GF as well. Anyway, I do plan to try and cut back on my meat consumption and have decided to try and have at least 1-2 meatless days a week. Wish me luck! Here’s this month’s recipe or two!

So I decided to go Vegan for a month (my music producer Kevin McNoldy has been vegan for 13 years!). Yep, cold turkey! But actually since I’m already Gluten Free and I don’t really eat dairy much anyway, I thought it would be fairly easy. My biggest challenge i think is going to be eggs, because let me tell you, I LOVE EGGS! I’ll let you know in my next update how it went. Anyway in light of my new diet here’s fun recipe for you to try.

For those of you that don’t know me on a day to day basis, I have a gluten allergy and tend to follow a high protein, low carb, non-dairy diet. I know- TMI! But seriously, it’s not a fad, it’s a lifestyle. Because of my limited diet, I’m always hunting for new recipes to try and I find all kinds of cool options out on Pinterest. While not all of them are mouthwatering, some of them are really too die for!!! So much so, I’ve decided to add a monthly recipe post so you can try some of these yourself. So without further ado, this month’s post is one of my all-time favorites: Bananas and Chocolate. Need I say more?

Paleo Chocolate Chip Coconut Flour Banana Bread

TIP: A great way to ripen bananas is to put them in your freezer for a couple of days. When you are ready to make the bread, take them out and let them thaw in a bowl for a few hours before adding the rest of the ingredients. I also usually double the recipe so I can bake two loaves at once. They freeze very well!
